Made and baked entirely on the street right in front of you, they are more a flat disk-shaped bread than a pancake but they are delicious. Made of dough, from an unleavened wheat flour, they are stuffed with shredded pork and minced green onions, rolled up, brushed with butter and baked in a simple fire pit oven set up on a street corner. All it takes is a skilled wife and husband team and they are cranking them out at a pace of a dozen nearly every fifteen minutes.
